A popular curry of Thailand. Pair it with rice for a full meal.
Ingredients
-
400g of boneless chicken thigh fillet
-
2 tbsp SOS Thai Yellow Curry paste
-
1 tbsp of olive oil
-
¼ cup water
-
¾ cup of coconut cream
-
Coriander for garnish
-
2 tsp lemon juice
Directions
Heat a pot and add in the olive oil
Add in the Thai yellow curry paste and saute for a min till the spices release their aroma
Add in the coconut cream and water and mix well
Now add in the chicken and let it cook for 15 min
Once the chicken is almost cooked add in the lemon juice
Once the heat is off garnish with fresh coriander
Recipe Note
This make a mild thai yellow curry. Replace the chicken with tofu for a vegetarian version. If you want to spice it up you can add in a few chilli padi:)
